Lentil and yam soup

Ingredients
2 cups dried lentils, soaked (any kind you like, I used 3 different ones)
1 cups yams (sweet Potatoes), peeled and cubed
3 garlic cloves, minced
¼ cup Onion shredded
1 green onion (scallion) cut into small pieces
2 carrots, thinly sliced or shreded
3 cups water
½ tablespoon Salt (adjust to ur taste later)
½ tablespoon cumin
½ tablespoon cinnamon
½ tablespoon chili powder
½ tablespoon red pepper flakes
1 tps Hot sauce (any)
Fresh Coriander :)
Directions
- Soak the lentils in cold water
- In a deep pot, add ¼ cup of water and salt and onion on high heat and cook (sauté) till water is almost dried
- Add the rest of water (2 ¾ cups) and add the carrots, yams, and lentil
- Bring to a rolling boil, stirring the mixture occasionally
- Add the salt, pepper, cumin, cinnamon and reduce heat
- Cover the lid and let the soup cook for about 25 mins or until the lentil and Yam are soft
- If you are happy with the consistency, Drain the sopu with a sieve and seprate all the juice from the chunks
- return the soup (just the juice and not the yam and lentils) on the stove
- Now add the green onions, Corriander and hot sauce (adjust other spices at this time as well) and cook for 2 mins
