TAHARI (vry spicy)*

Rice 5cups
-Masoor Dal (splitted orange lentils) [1/4th quantity of rice]
-Mutton 3/4kg
-ginger 4''
-garlic 8-10 large cloves
-onions 2 medium
-tomatoes 4 medium chopped
-green chillies 4-6 slitted
-cumin seeds 1/2 tsp
-caraway seeds (Shahjeera) 1full tsp
-cardamom 4-5
-cinnamon 3"
-red chilly powder 4tsp(depending upon how spicy u want...dnt 4get v also hav green chillies)
-oil 2cups
-salt
-corrainder leaves chopped.
-turmeric pwdr 1/2tsp

Wash the mutton thoroghly and pressure it with haldi,salt and 1/2 onion sliced. dont cook it too much because its going to be cooked again with rice in "dum". We dont want it overcooked and all shredding.
wash the rice and dal togeather and keep aside.

Grind ginger,garlic,onions and all the whole spices togeather. add water if needed.(make a smooth paste)

Heat oil and add som green chillies, and the above mentioned paste. Cook it until its golden add lil water if needed so dat the paste dsnt stick to da buttom of the vessel.[BHUNNO].

Add haldi. Add chopped tomatoes. Add red chilly pwdr. Stir and cover it.
Then after 5mins Add mutton and meat stock. Add salt. Let it cook for 5-8mins.

Then Add 5 cups of water. let it come to boil then add washed rice and dal. let it cook on medium flame for sometime, when u see da rice has grown longer add corriander leaves stir it carefully and cover it well like its almost sealed (dum). keep it on low flame for sometime keep checking tho.


Tip- have it wid plain curd on side coz its vry spicy OR sweet raita!

Qeema Samosas

Ingredients
mince meat half a kilo
cabbage 1/4 cup finely chopped
onions 2 finely chopped (u can use less or more according to ur liking)
coriander & mint 1/2 a cup chopped
green chilis 2 finely chopped
salt, red chili flakes to taste
turmeric powder 1/4 tsp
cumin seeds 1/2 tsp
whole red chilis 2-3
oil 1-2 tbps
extra 1/2 onion chopped
garlic 2 cloves finely chopped
ginger paste 1 tsp
samosa sheets
Method
heat oil in a pan & saute onions along with red whole chilis, garlice & cumin seeds untill a nice aroma starts coming out,, add in mince & ginger paste fry fry fry,, add n ur spices & fry a bit,,add in cabbage fry fry fry until cabbage is soft,,add in onions fry for few mts & turn off the heat,, add in ur green masala stir & mix well & let it cool.
now fill in the samosa sheets
deep fry the prepared samosas
serve hot with chutneys of ur likings

Red and white karahi

Ingredients:
Chicken boneless ½ kg
Beef undercut 300 gm
Finely sliced onion 1
Boiled tomato 3
Green chili 4-5
Yogurt 1/8 kg
Green coriander ¼ bunch
Ghee ¼ cup
Red and white karahi
Red chili crushed 1 tsp
Red chili powder 1 tsp
Turmeric 1 tsp
Cumin crushed 1 tbsp
Coriander crushed 1 tbsp
Dry fenugreek 1 tbsp
Ginger garlic paste 2 tbsp
Salt to taste

Qeema matar fry

Ingredients:
Ghee ¼ cup
Onion 1
Finely boiled and sliced tomato 3
Boiled peas 1 cup
Yogurt 1/8 kg
Green coriander ¼ bunch
Green chili 3-4
Garlic 4-5 cloves
Ginger 1 medium piece
Beef mince 300 gm
Cumin powder 1 tsp
All spice powder 1 tsp
Dry fenugreek 1 tsp
Turmeric 1 tsp
Coriander powder 1 tbsp
Red chili powder 1 tbsp
Salt to taste
