Banana chco chip muffins..

½ cup cashew nuts (optional)
...½ cup choc chips (semi sweetened)
1 ¾ cups all-purpose flour (or cake flour)
¾ cup granulated white sugar
1 teaspoons baking powder
¼ teaspoon baking soda
¼ teaspoon salt
1 teaspoon ground cinnamon ( you can use ½ teaspoon if you don’t like a strong cinnamon flavor)
2 large eggs - lightly beaten
½ cup unsalted butter, melted and cooled
3 ripe large bananas (approximately 1 pound or 454 grams), mashed well (about 1-1/2 cups)
1 teaspoon pure vanilla extract

1. Preheat oven to 350F (180 C)
2. Heat a pan and add one teaspoon of butter and roast the cashew nuts till they turn brown. – set aside for 5 mints to cool.
3. In a large bowl combine the flour, sugar, baking powder, baking soda, salt, cinnamon, and nuts.
4. In a medium-sized bowl combine the mashed bananas, beaten eggs, melted butter, and vanilla. Give a quick mix and with a rubber spatula or wooden spoon, lightly fold the wet ingredients (banana mixture) into the dry ingredients just until combined and the batter is thick and chunky. Add the chco chips and fold.

5. The important thing is not to over mix the batter. You do not want it smooth. Over mixing the batter will yield tough, rubbery bread Spoon the batter into the prepared muffin tins.

6. Bake about 20 - 25 minutes or until a toothpick inserted in the center comes out clean. Place on a wire rack to cool for five minutes and then remove muffins from pan. Serve warm or at room temperature.

Banana Chocolate Loaf Cake

Ingredients
Eggs 3 beaten
Bananas 3 mashed
Caster sugar 4 ounce
Soft butter 8 ounce
Self raising flour 10 ounce
Milk ¼ cup
Chocolate chips ½ cup
Baking powder 1 tsp
Vanilla essence 1 tsp
Method
Grease a large loaf tin with butter and line the base with butter paper, beat 8 ounce butter, 4 ounce sugar and 1 tsp vanilla together in a bowl until creamy, gradually add in 1 egg, folding in the sieved flour and baking powder mixture, beat until smooth and creamy add the 3 mashed bananas, ¼ cup milk and ½ cup chocolate chips, fold all together, transfer the mixture into the prepared tin and bake in a pre heated oven 180 degree C for 50 to 55 minutes

Banana chocolate muffins

Ingredients
Eggs beaten 2
Bananas mashed 3
Water 3 ounce
Oil 3 ounce
Chocolate chopped 3 ounce
Caster sugar 4 ounce
Self raising flour 5 ounce
Flour 5 ounce
Baking powder 1 tsp
Baking soda 1 tsp
Salt ¼ tsp
Method
Sieve the 5 ounce flour, 1 tsp baking powder and 1 tsp soda, add ¼ tsp salt, stir in the 4 ounce caster sugar. Mix together 3 mashed bananas, 2 eggs, 3 ounce water and 3 ounce oil in a jug, pour this onto the dry ingredients and gently mix until just combine, fold in the 3 ounce chopped chocolates, line a 12 whole muffin tin with 12 paper cases and fill with the mixture, bake in a pre-heated oven on 180 degree C for 30 minutes, remove and cool.

Deep fried bananas

1 cup self rising flour
1/3 cup rice flour
1/2 tsp salt
1 cup cold water
Zest of 1 lemon
6 bananas
Oil for deep frying
Caster sugar 3 tbsps

Sift flour, rice flour and salt together in a bowl. Add water enough to make a coating batter. Mix well and stir in the lemon zest.
Heat oil until hot.
Peel the bananas slice in half and dip in batter and coat 3 or 4 times. Deep fry in hot oil until golden and crisp. Drain excess oil and dust generously with caster sugar and serve with lemon wedges.
