Chocolate brownies

Cooking chocolate 200g
Cocoa 3 tbs
Butter 100g
Flour 1 c
Sugar 1 1/4 c
Eggs 3
Salt 1/4 tsp ( if using unsalted butter only )
Vanilla 1 tsp
Walnut chopped 50 g

Melt chocolate , butter, cocoa in Microwave ( or over a double boiler ). When sufficiently cooled , beat in sugar, eggs, van, salt. Fold in maida & nuts. Line a rectangular pan with butter paper. Pour in the batter. bake at 180 for 30 min. Invert & cut into squares when cool.
Drizzle over with chocolate sauce .

HOT CHOCOLATE

ngredients
chocolate 4oz
low fat milk 2 cups cocoa 2tbsp
superfine sugar 4tbsp
heavy cream well chilled 2/3 cup

Method
Grate the chocolate. Heat the milk, cocoa and sugar in a pan. Remove from
heat add the grated chocolate and whisk the mixture at high speed for at
least 2 minutes. Beat the cream to firm peaks. When the hot chocolate is
very foamy serve it immediately in large mugs topped with 2 tablespoons of
the whipped cream. Sprinkle a little bit of cocoa over it.

TIPS
Always use the best quality chocolate that you can afford. Stay away from
powder and
syrup. Although these can be used if you are desperate, you will definitely
get better results if
you use the 'real stuff'. Milk, dark or white chocolate.
2.Use approximately 30g of chocolate per person, with an equal amount of
cream
3.Be patient when melting your chocolate. Do this slowly over low-medium
heat using a
double boiler. Make sure you don't burn the chocolate. Avoid using microwave
to melt your chocolate, this causes the chocolate to melt at different rates
and you are more likely to burn your chocolate using this method. Add the
cream once the chocolate is completely melted.
4.Add equal quantities of milk and water to the chocolate-cream mix and warm
to a suitable
temperature without boiling.
 

chocolate cup cake




 Ingredients
Flour 85gm
Cocoa powder 25gm
Boiling water 1/2cup
Egg 1
Baking powder 1 1/2 tsp
Sugar 100gm
Salt 1/4tsp
Butter 55gm
Vanilla 1tsp
Chocolate chip 30gm


Method
In a small bowl stir cocoa powder and coiling hot water until smooth and let
it cool at room temperature.
In another bowl sift together the flour, baking powder and salt.
Cream butter and sugar until light and fluffy. Add egg and mix.
Add flour mixture and mix nicely.
Then add the cooled cocoa mixture and stir until smooth. Fold chocolate
chips.
Bake @ 160 C for 15-20 minutes.

TIPS
Place the pan in the centre for proper and even heating.

 

CHOCOLATE GANACHE

Ingredients
Fresh cream 1 cup
Chocolate 1 cup

* Bring the cream to a boil, then remove from the heat at once and pour over
a bowl of chopped chocolate.
* Let it stand, covered, for a moment to soften the chocolate, then whisk
until smooth. For best results, let it cool overnight at room temperature.

Chocolate ganache can be poured as a coating, chilled and made into
truffles, whipped into a delightfully light frosting or filling or just
mixed into white frosting or whipped cream for instant chocolate flavor.

TIPS
· Proper consistency, do not add too much cream .Dont add the cream before
the chocolate boils , it should be steamy but not boiling .After adding the
chocolate keep stearing until smooth.

· If ganache is too warm let it cool slightly before pouring it onto a
cake

chocolate fondant



Chocolate Fondant

Ingredients
Flour 75gm
Butter 100gm
Dark chocolate 100gm
Sugar 75gm
Baking powder 3/4tsp
Whole egg 4 no


Method:
· Melt butter, chocolate in the microwave or in a saucepan.
·Whisk whole egg until light and fluffy add sugar little by little.
·Fold in flour sifted with baking powder.
. Lastly fold in melted chocolate mixture.
· Pour into buttered and floured moulds and bake at 180 C for 7 to 8
minutes.

·Demould immediately and serve hot with a scoop of vanilla ice cream.

TIPS
If the fondant becomes too dry, add a few drops of water and continue to
knead.

Choco Vanilla Triangles

Ingredients
Flour 1 cup
Caster sugar ½ cup
Butter ½ cup
Eggs 2
Cocoa powder 2 tbsp
Baking powder 1 tsp
Vanilla essence 1 tsp
Method
In a bowl combine ½ cup butter and ½ cup sugar, beat them till the mixture becomes creamy, while beating adds 2 eggs one by one, add 1 tsp vanilla essence. Now in another bowl mix 1 tsp baking powder and 1 cup flour. Divide this mixture in two parts. Add 1 tbsp coco powder in one part, also divide butter in two parts. In one part of butter add 1 tbsp coco powder. In this butter add flour cocoa mixture and fold. In the second part of butter add plain flour mixture. Grease preheated sandwich maker, pour plain mixture in it and make pattern with the cocoa mixture, cover the sandwich maker and leave for 2 to 3 minutes. Chocó vanilla triangles are ready to serve. Serve with coffee.

Choco Cocoa Special

Ingredients
Bread slices 5 to 6
Condensed milk ½ cup
Cream 2 tbsp
Cocoa powder 2 tbsp
Butter 2 tbsp
Almond ½ cup
Sugar 1 cup
Coconut grated as required
Cherries as required
Oil for frying
Method
Crumb the 5 to 6 bread slices, add ½ cup condensed milk and 2 tbsp cream, make small patties. Deep fry in oil till its color turn to golden brown. Now in another pan combine 1 cup sugar, 2 tbsp butter, 2 tbsp cocoa powder and ½ cup almond. Cook and make it into chocolate sauce. Now roll the fried patties in this sauce. Decorate with grated coconut and cherries. Serve with Mocha drink.

Banana Chocolate Loaf Cake

Ingredients
Eggs 3 beaten
Bananas 3 mashed
Caster sugar 4 ounce
Soft butter 8 ounce
Self raising flour 10 ounce
Milk ¼ cup
Chocolate chips ½ cup
Baking powder 1 tsp
Vanilla essence 1 tsp
Method
Grease a large loaf tin with butter and line the base with butter paper, beat 8 ounce butter, 4 ounce sugar and 1 tsp vanilla together in a bowl until creamy, gradually add in 1 egg, folding in the sieved flour and baking powder mixture, beat until smooth and creamy add the 3 mashed bananas, ¼ cup milk and ½ cup chocolate chips, fold all together, transfer the mixture into the prepared tin and bake in a pre heated oven 180 degree C for 50 to 55 minutes

Banana chocolate muffins

Ingredients
Eggs beaten 2
Bananas mashed 3
Water 3 ounce
Oil 3 ounce
Chocolate chopped 3 ounce
Caster sugar 4 ounce
Self raising flour 5 ounce
Flour 5 ounce
Baking powder 1 tsp
Baking soda 1 tsp
Salt ¼ tsp
Method
Sieve the 5 ounce flour, 1 tsp baking powder and 1 tsp soda, add ¼ tsp salt, stir in the 4 ounce caster sugar. Mix together 3 mashed bananas, 2 eggs, 3 ounce water and 3 ounce oil in a jug, pour this onto the dry ingredients and gently mix until just combine, fold in the 3 ounce chopped chocolates, line a 12 whole muffin tin with 12 paper cases and fill with the mixture, bake in a pre-heated oven on 180 degree C for 30 minutes, remove and cool.
