Pancakes with Maple Syrup and Butter



  • 300g self-rising flour
  • 500ml milk
  • 2 eggs
  • ½ teaspoon baking powder
  • ½ teaspoon baking soda
  • 3 tablespoons granulated sugar
  • Pinch of salt
  • 60g melted butter
  • Extra Melted butter to grease and cook
  • Maple syrup, to serve

  1. Sift the flour, salt, baking powder and baking soda into a large bowl.
  2. Whisk together the milk, sugar and eggs in a separate bowl.
  3. Now add the milk mixture to the flour mixture, whisk constantly until a smooth batter is formed.
  4. Now add melted butter gradually in the batter and keep stirring.
  5. Put in the fridge for 30 minutes.
  6. Heat a large non-stick frying pan over medium heat.
  7. Grease with the extra melted butter
  8. Pour 1/3 cup of the batter into the heated pan and quickly move the pan in round direction to form a 15cm-diameter pancake.
  9. Cook for 2-3 minutes until bubbles appear on the surface of pancake and it starts getting golden underneath.
  10. Turn and cook for 2 minutes until golden.
  11. Make about 10 pancakes repeating same process
  12. Place all pancakes on serving plates.
  13. Pour maple syrup and butter on the top of the pancakes.

Quick n Easy Yogurt n cereal Parfait

Ingredients

1 container (8 oz.) plain or flavored yogurt
½ cup fresh fruit any u like ( Mango, strawberries, sliced banana,
blueberries or raspberries)
1 cup cereal or rice crispys (again anything u like)

Directions

In a tall glass or bowl, layer yogurt, fruit and cereal until glass is full.
Top with extra fruit.
Serve immediately
You could also add dry fruits if u like :)

kokotendi/Gul Gul

cups flour
4 tbsp fine semolina
1 tsp baking powder
half tsp cardamon powder
2 tbsp melted butter
milk/water or coconut milk 3/4 to 1 cup
egg white (optional)
pinch of salt

Knead together the ingredients to a dough, not too soft not too hard. Form tiny balls n shape using a fork, by pressing the tiny ball of dough on the back of a fork and rolling it away to give a perfect sea-shell shape. Then fry on low heat until golden n crispy. If you fry on too high heat, they will be soft on the inside, and you want these super crisp. So once the oil is hot enough, put them in and then immediately lower the heat and keep stirring, let them gradually colour up to a lovely golden brown. Drain and set aside then make the sugar coating:

Sheera for sugar coating

1 cup sugar
half cup water
drop of vanilla
pinch of cardamon

Boil until thick n sticky, add the fried kokwas n toss, then spread out on a pan to dry. Store in airtight container!

chocolate tart

Ingredients
Fresh Cream 200ml
Sugar 30gm
Coca powder 20gm
Egg yolk 3nos
Vanilla essence few drops
Chocolate chips 30gms


Method
Heat chocolate chips, cream and sugar.
Add coca powder, yolk and vanilla essence.
TIPS
Give the chocolate tart a tangy citrus flavor by adding a small amount of
freshly grated lemon zest or orange extract

Chocolate Fondant

Ingredients
Flour 75gm
Butter 100gm
Dark chocolate 100gm
Sugar 75gm
Baking powder 3/4tsp
Whole egg 4 no


Method:
· Melt butter, chocolate in the microwave or in a saucepan.
·Whisk whole egg until light and fluffy add sugar little by little.
·Fold in flour sifted with baking powder.
. Lastly fold in melted chocolate mixture.
· Pour into buttered and floured moulds and bake at 180 C for 7 to 8
minutes.

·Demould immediately and serve hot with a scoop of vanilla ice cream.

TIPS
If the fondant becomes too dry, add a few drops of water and continue to
knead.
