Fried Pulao

Ingredients

300 grams rice
2 onions
3 bay leaves
4 aniseeds
Few curry leaves
4 to 5 cardamoms
4 to 5 green chilies
¼ cup oil
½ cup water
2 to 3 pieces cinnamon sticks
1 tbsp fennel seeds
1 tbsp coriander seeds
Hot spices as required
Water as required
Soft cloth as required
Salt to taste

Method

Firstly chop 2 onions into fine slices and keep it aside. On a soft cloth, include 1 tbsp fennel seeds and 1 tbsp coriander seeds and tie it in a form of a bunch. To prepare 300 gram rice, boil water as required and add the soft cloth bunch, salt to taste 4 aniseeds flower and whole spices in it and cook it on low flames. When water has reached to its boiling point for 2 to 3 times, reduce flames and include already soaked rice in it to boiled and rinse. In a pan, heat 1/4 cup oil to cook few curry leaves and finely sliced onion in it. When onion color changes to golden brown, add half glass of water in it and reduce flames and add 3 bay leaves, 2 to 3 pieces of cinnamon stick, 4 to 5 green chilies and 4 to 5 small cardamoms in it and stir it for 2 to 3 minutes. When fragrances is in the air, add boiled rice in it and mix it properly and right at the end, dissolves 1/4 tsp yellow food color in water and sprinkle it all around mixed rice. Delicious Fried Pulao is ready.
