Nauratan Terkari

Ingredients
1 medium onion
1 small bottle gourd
1 medium carrot
1 turnip
1 ridged gourd
1 capsicum
1 round gourd
250 grams yogurt
2 potatoes
4 tomatoes
6 chopped green chilies
½ cauliflower
½ cup peas
½ bunch spinach
¼ bunch coriander
1 tsp mustard seeds
1 tsp cardamoms
1 tbsp hot spices powder
1 tbsp turmeric powder
1 tbsp red chili flakes
½ tsp ajwain
4 tbsp clarified butter
Salt to taste

Method
Firstly, chop 2 potatoes, ½ cauliflower, small bottle gourd, 4 tomatoes, 1 medium carrot, 1 turnip, 1 ridged gourd, 1 capsicum and 1 round gourd into small pieces. Heat water to boil cauliflower and carrot to soften them and take it out. In the same water, boil ½ bunch spinach and take it out and keep it aside. In a pan, heat 4 tbsp clarified butter to sauté 1 onion until it turns golden brown. Add 1 tbsp cumin seeds, 1 tsp mustard seeds, 1 tsp cardamoms and ½ tsp ajwain and stir it for 2 minutes. Add 250 grams yogurt, 1 tbsp hot spices, 1 tbsp crushed red chili, 1 tbsp turmeric powder, salt to taste and 6 green chilies to it. Cook it for 4 to 5 minutes with closed lid. Then add 1 glass water, ½ cup peas, ¼ bunch coriander and all the vegetables and allow simmering in covered pan. When all the vegetables are well cooked, increase flame to let water evaporate. Delicious Nauratan Terkari is ready to serve.
