Spicy Egg Plant

Ingredients
½ kg egg plants
250 grams yogurt
1 onion
3 finely chopped green chilies
¼ cup oil
1 tsp nigella seeds
1 tsp mustard seeds
1 tbsp turmeric powder
1 tbsp crushed cumin
2 tbsp red chili powder
2 tbsp ginger garlic paste
4 tbsp tamarind paste
Coriander for garnishing
Salt to taste

Method
Firstly slice ½ kg egg plants in 3inch sized pieces. Finely chop 1 onion. In a pan, heat ¼ cup oil to cook 2 tbsp ginger garlic paste till it is well cooked. Add 1 finely chopped onion and pieces of egg plants and stir it for 4 to 5 minutes. Include 250 grams yogurt, 4 tbsp tamarind paste, 1 tbsp turmeric powder, 2 tbsp red chili powder, 1 tbsp crushed cumin powder, 1 tbsp nigella seeds, 1 tsp mustard seeds, 3 finely chopped green chilies and salt to taste in it on low flames and allow simmering. After 8 to 10 minutes, remove the lid and increase flames to dry water. Take it out in a platter and garnish it with coriander before serving. Delicious Spicy Egg Plant is ready.
